So as to not jack the other thread where this topic originated, I'll post this here.

found a decent looking recipe.

Amazing Paleo Paleo Recipes Paleo Simple Coconut Bread - Free Recipe by Amazing Paleo (http://www.amazingpaleo.com/2012/08/15/simple-coconut-bread/)

I followed this recipe almost exactly with mostly the same ingredients, thank you expensive by nature.
I added a little more honey and just used regular coconut oil instead of spray. I used an 8x8 brownie pan instead of bread.

not what I expected, but not unpleasant. Kinda like coconut corn bread.
I'm sure it"ll make a great side or be great in the toaster oven with a little butter.

Didn't use that link or a recipe because I added things to make it my own.
Read that apple cider vinegar and sparkling water make it fluffier so I added that a little extra oil and less honey.

That one is almond flour, coconut flour, and flax meal.

Second loaf taste more like corn bread.
I'll lower the amount of almond flour add coconut flour and keep the flax the same.

Tomorrow if I have a female come over I'll be making coconut flour and unsweetened coconut breaded shrimp cooked in coconut oil.
Sides will be veggies, salad and maybe some quinoa

The coconut flour and oil bread is loaded with MCTs and would make a great side to a pre workout meal.
Well worth the money and time.

The bread and cookies are very good with coffee so I'd imagine they be fine with tea.

I modified the recipe for another batch.... added regular milk, 50/50 coconut flour and flour with gluten. a few mashed bananas and some sugar, some vanilla and the loaf was on point.

But that makes it have good amount or carbs with a lot of fats.

I never said it was a healthy change, I wanted to make something my kids would eat. I could have just gave them the sugar and they would have been happy though.

I thought this was a healthy snack for you.
Probably still isn't that bad and better than store bought shit.
