View Full Version : Pumpkin and Sweet Potato recipes

Was just looking at BBG's progress log and found about pumpking, something I have never considered eating outside of the pie version. I'm may add like a sugar free maple syrup and roasted walnuts to sweet potatoes, and may do the same with pumpkin.

If anyone has a good protein to mix into either one, go ahead and mention it, i'd appreciate it.

First thing that comes to mind is a sweet potato salad.

Roast up some cubed sweet potatoes with olive oil. Then take out and toss with red bell pepper, red onion, corn, black beans and cilantro an even some jalapeņo. Super good.


I also once attempted to make twice baked sweet potatoes with ricotta.... Shit didnt come out as well so I made mashed sweet potatoes with ricotta and added some grilled bacon. Was great. :)

I love sweet potatoes.

Pumpkin??? Well I have a gluten-free pumpkin ale fermenting right now. Can't say I do too much else other than pumpkin treats.

Sub in pumpkin for some dishes that you normally would/could use butternut squash in I guess....

Heh. Makes me think of the pumpkin ale put out by southern tier from New York area or some shit. Retails for about $9.25 out here in portland. Think it's 9% abv, pretty sweet tasting but a little higher taste of alcohol. Worth the try if ever stumbled upon :)
