I've been making these for about ten years. By far the best pancake I have ever eaten.
I use spelt/oat/buckwheat flours with local buttermilk. Plus blueberries and choco chips sometimes for the kids.
Sometimes I add some protein powder.
Some real maple syrup goes a long with them. Damn, I want them now!
