Keto Spinach & Chicken
Am about 10 days into a full on keto diet- Keto stix say all is working as it should. Feel good on it - although distance running seems a bit harder so far.
Anyways - made this on the weekend and loved it - thought I would share.
Wanted a chicken breast but is way too low fat - so this was the solution.
Fried 3 strips of finely diced bacon with a whole onion in some coconut oil. Add 2 cups spinach and 2 cups of chopped kale and fried that until veggies all soft. Then about 3-4 oz of old cheddar, 2 oz of blue cheese, 1 oz parmesan and about 1/4 cup of heavy cream went in until all mixed and melted.
Poured this cheesy green goodness over a barbecue chicken breast and a bunch of asparagus - was awesome. Served Two
