Iron Kitchen: Spicey Shrimp Stuffed Portabello

Ingredients:



  • 1/4 Cup Olive Oil
  • 1/4 Cup Lemon Juice
  • 2tsp Garlic
  • 2tsp Paprika
  • 1tsp Oregano
  • 1/2tsp Cayenne
  • 1/2lb Shrimp
  • 1/2 Cup Ricotta Cheese
  • 1 Portabello Mushroom


Recipe Instructions:


  1. Cook shrimp in small frying pan with lemon juice, cayenne, and oregano until opaque
  2. Remove from heat and chop the shrimp finely and combine into a bowl with ricotta, garlic, paprika
  3. Remove core from the portabello and place the shrimp mixture into portabello
  4. Place portabello in a 1/4 cup of olive oil and a 1/2 cup of water in a sautee pan that is oven safe
  5. Heat the oven to 350 degrees and cook for 15 minutes
