First thing that comes to mind is a sweet potato salad.

Roast up some cubed sweet potatoes with olive oil. Then take out and toss with red bell pepper, red onion, corn, black beans and cilantro an even some jalapeño. Super good.


I also once attempted to make twice baked sweet potatoes with ricotta.... Shit didnt come out as well so I made mashed sweet potatoes with ricotta and added some grilled bacon. Was great.

I love sweet potatoes.

Pumpkin??? Well I have a gluten-free pumpkin ale fermenting right now. Can't say I do too much else other than pumpkin treats.

Sub in pumpkin for some dishes that you normally would/could use butternut squash in I guess....
